Chicken and Chorizo Ragu

Makes 4 servings




  1. Fry the chorizo for 5 minutes until it releases its oil
  2. Add the onions and fry for 5 more minutes
  3. Add the garlic and fry for 2 minutes, then add the paprika
  4. Add the chicken and fry for 2 minutes until well coated in the spices and beginning to brown
  5. Transfer to the casserole pot and pour in the tomatoes, stock, basil, and oregano, cover and cook for 40 minutes
  6. Boil the pasta in the saucepan (see instructions on packet for cooking time)
  7. Stir in the juice of the lemon to the ragu
  8. Add some chopped spinach and cook until it wilts
