Pork Goulash

Method

  1. Chop the meat and onions into ~1 or 2 square inch peices.
  2. Preheat the lard/oil in the pan.
  3. Brown the meat in the pan.
  4. Add the spices and mix it around so that the meat is covered.
  5. Add the tomato paste and mix it in.
  6. Add the chopped onions.
  7. Add the beef stock.
  8. Simmer at a low-ish heat with the lid on for 1 hour 45 minutes.
  9. Remove the lid, increase the heat and boil for another 15 minutes to reduce the liquid by about 20-40%.
  10. Serve w/ bread or dumplings.
